3. Homemade recipe “Custard pancakes with kefir”

Preparing the dough for custard kefir pancakes is the same as for thin kefir pancakes. The main difference is adding half a glass of boiling water to the finished kefir dough while stirring.

Ingredients:

  • sifted wheat flour - 1 cup;
  • kefir of any fat content - 1 glass = 200 milliliters;
  • fresh chicken egg - 1-2 pieces;
  • hot boiling water - 0.5 cups;
  • granulated sugar - 2 tablespoons;
  • vegetable oil - 15 milliliters;
  • baking soda - 0.4 teaspoon;
  • table salt - to taste.

According to the home recipe, prepare custard pancakes with kefir as follows:

  1. Measure wheat flour according to the recipe and sift into a suitable container. In another container, beat mixed kefir and raw chicken eggs until smooth and add flour with salt and sugar in parts and with constant stirring so as to avoid the formation of lumps.
  2. Pour half a glass of boiling water into a mug, dissolve the required amount of baking soda in it and, while stirring, pour it into the finished kefir dough. Leave the dough to form for 5 minutes, then pour 2-3 tablespoons of vegetable oil into the finished dough and mix everything one last time until smooth.
  3. In a dry, clean and hot frying pan, we are talking about a thick-walled cast iron frying pan, pour a small amount of vegetable oil for the first pancake, and then there is no need to lubricate it - just pour the next pancake with a ladle and, turning the pan at an angle around the circumference so that the pancake spreads evenly, bake as usual way - from both sides.

If you are not satisfied with the thickness of the first pancake, dilute the dough with water boiled at room temperature, adding it in small portions while stirring.

4. Original recipe for openwork pancakes with kefir

Openwork kefir pancakes are prepared in the usual way, but the secret lies in the temperature of the ingredients: they all must be warm and then the kefir pancake dough will be so porous that the pancakes turn out openwork.

Ingredients:

  • wheat flour - 2 cups without a slide;
  • kefir - 0.5 liters;
  • fresh milk - 0.5 liters;
  • fresh chicken egg - 3 pieces;
  • granulated sugar - 1 tablespoon;
  • vegetable oil - 30 milliliters;
  • table salt - 0.5 teaspoon.

According to the original recipe, prepare openwork pancakes with kefir as follows:

  1. Measure out the required amount of flour, sift it and mix with sugar and salt.
  2. In another container, mix kefir and fresh chicken eggs at room temperature, add baking soda to this mixture, and then the required half volume of warm milk. Mix until smooth and add flour in small portions while constantly stirring. As soon as the dough becomes a homogeneous mass, add the rest of the milk and mix everything again. All that remains is to pour vegetable oil directly into the dough, so that later you don’t even need to grease the pan, except for the first pancake.

It’s not easy to surprise with the originality of pancakes, but with this recipe it’s possible. Pancakes acquire an exquisite taste and aroma - you can pamper both guests and household members, and cooking is no more difficult than according to all known recipes.

Ingredients:

  • wheat flour - how much will go in until it reaches the consistency of liquid sour cream;
  • kefir - 1 liter;
  • chicken egg - 2 pieces;
  • granulated sugar - 4 tablespoons;
  • table salt - 0.5 teaspoon;
  • cognac - 6 tablespoons;
  • baking soda - 1/3 teaspoon;
  • vanillin - 1 pinch.

  • natural cream - 0.5 cups;
  • kefir - 0.5 cups;
  • baking soda - 0.5 teaspoon;
  • fresh lemon juice - 3 milliliters;
  • chicken egg - 1 piece;
  • granulated sugar - 1 teaspoon;
  • table salt - a pinch;
  • sunflower oil - 30 milliliters;
  • butter - 50 grams;
  • red caviar - 1 jar.

According to a quick recipe, prepare kefir pancakes as follows:

  1. Sift premium wheat flour into a dry suitable container in the specified volume.
  2. Break a fresh chicken egg and separate it into white and yolk. Beat the whites with granulated sugar in a separate container, add cream and yolk to it - mix everything. Pour in kefir and mix too, adding the indicated amount of flour with added salt while continuously stirring. Pour baking soda, quenched with lemon juice, into the almost finished dough, mix again and the dough for baking quick pancakes is ready.

Mix eggs, salt, sugar, kefir, fermented baked milk. Mix until the spices dissolve and bubbles appear on the surface. Next, add a little flour. Mix everything thoroughly until smooth and without lumps.
Place the dough in the refrigerator for about 30 minutes.

Bake in a well-heated frying pan. Pour a small amount of dough and spread it in a small layer over the surface.

Then carefully flip over with a spatula and cook the other side. You should take a frying pan that has a non-stick coating. The pancakes will not stick to it, and it will be convenient to turn them over.

Almost the most difficult recipe to prepare. The peculiarity of this recipe is to be able to turn it over without tearing it. The right prescription will help prevent breakouts.

It’s time to add the main ingredient, which makes the pancakes thin with holes - boiling water. It is important to add boiling water correctly. If you pour it in immediately, the dough will curl disproportionately. Therefore, you need to pour in a thin stream, stirring constantly. The dough should foam.

At the next stage comes the turn of flour. You can add everything at once, because... Flour dissolves in hot water without forming lumps.

Pour in baking soda and sunflower oil. The less soda you put in, the smaller the holes will be.

The dough should end up being very liquid. Heat a frying pan and grease the surface with a couple of drops of oil. The dough should be taken no more than 2/3 of a regular ladle. Fry for 2 minutes each side.

Products:

  • Flour – 400g.
  • Eggs – 4
  • Kefir – 250 ml.
  • Boiling water – 200 ml.
  • Sugar – 70g.
  • Soda, salt
  • Vegetable oil – 2 tbsp.

Recipe:

The first step of preparation is to beat eggs with a little salt until fluffy for 3 minutes.

The most important step is introducing boiling water into the egg liquid. The process requires care, pour in a thin stream, stirring constantly.

Add kefir to the resulting liquid and mix.

Component:

Psh flour – 150g.

  • Kefir 1% – 500ml.
  • Eggs – 2
  • Sugar – 2.5 tbsp.
  • Salt - a pinch
  • Soda – 1 tsp.
  • Vinegar – 2 tbsp.

Preparation:

Before starting cooking, kefir needs to be heated to better dissolve the flour. The main thing is not to overdo it, otherwise the kefir will curdle.

Add salt and sugar to warm kefir, stir well until the granules are completely dissolved.

Beat the eggs with a whisk and pour into warm kefir.

Be sure to sift the flour and add it into the liquid in parts, while observing the consistency.

If it seems to you that the dough is thick, do not rush to dilute it with liquid. After adding soda slaked with vinegar, the dough will become airy, fluffy and more liquid.
