Soy milk is an excellent food product not only for those who cannot tolerate animal milk or are allergic to animal protein, but also for anyone who wants to live as long as possible. The quality of soy milk depends on many factors, and to minimize the risk of consuming a low-quality product, it is best to prepare soy milk yourself. Moreover, it is not difficult to do this.

Step #1: Buy soybeans

You can buy soybeans at a regular grocery store. They cost, on average, 60 rubles per kilogram, sometimes less, sometimes more. Before you put soybeans in your basket and take them to the checkout, carefully read the label on the package:
- is there any indication that the soybean you are holding in your hands is genetically modified? Buy only natural soybeans;
- where is the soybean grown? It is better if in an ecologically clean region, since soybeans easily absorb heavy metal salts and other harmful substances from the soil, which then enter your body.

Step #2: Prepare the Soybeans

Take 200 grams of soybeans and rinse them thoroughly under running water. Then soak, making sure that the water covers the beans completely. Some advise taking not tap (chlorinated) water, but purified and even mineral water. In any case, you need to soak the soybeans for at least 8 hours. During this time, it is advisable to change the water a couple of times. If you soak the beans all night, you don’t have to change the water; you will get milk, but it will have a more pronounced “pea” flavor.
During soaking, the soybeans will approximately double in size, so take a larger container for them.
At the end of soaking, stir the beans with your hand. At the same time, the surface husk will separate from them. If you remove it, the taste of soy milk will be more pleasant. Simply pour water over the beans and the husks will rise to the top. We wash the soybeans thoroughly - that’s it, it’s ready to eat.

Step No. 3: grind the soybeans

For 200 grams of dry soybeans (swollen is 400 grams), you need to prepare 1 liter of clean boiled water. Now pour the soybeans into a blender, add water and grind to a soft, snow-white pulp. Usually this procedure has to be repeated 3-4 times, since all the soybeans and a liter of water cannot fit into the blender at once.

Step No. 4: boil soybean porridge

Pour the soybean pulp into a large saucepan and place on low heat. After boiling, the pulp should be boiled for about 20 minutes over low heat. Don’t go far - the contents of the pan must be constantly stirred so as not to burn and the foam must be skimmed so that it does not escape.
Some people add more water at this stage to make the paste thinner, but this is a matter of taste and habit.

Step No. 5: strain the soybean slurry

After slightly cooling the contents of the pan, we begin to filter it. Some use a sieve for this, others use calico folded in half, and others use a special woven sleeve. The essence does not change: you need to carefully separate the liquid part from the solid.

Step #6: Get Soy Milk

In principle, we already have it ready. However, some housewives prefer to flavor soy milk in order to remove the “grassy” or “pea” taste. This is done by adding a pinch of vanillin and a teaspoon of cinnamon. Please note that if you add flavorings, then only natural ones, and then the milk must be boiled again.
If the proportions described above are observed, you get about 0.8 liters of soy milk, the cost of which is less than 15 rubles.

Note: soy milk should be stored in the refrigerator for no more than a week, but most often it is drunk much faster, since its taste is excellent and, unlike cow's milk, soy milk is perfectly absorbed by the human body.

Soy milk is a plant-based food product that is particularly popular among vegetarians. It can be used as a substitute for cow's milk, since these two products are very similar in color, taste and consistency.

Harm of soy milk

According to the latter, regular consumption of soy drink helps suppress one’s own endocrine system, reduces the production of high-quality sperm, and also provokes the development of thyroid diseases.

The milk drink made from soybeans contains phytic acid, which interferes with the absorption of calcium, zinc, iron and magnesium in the body during the digestion of food. Therefore, the benefits of the drink are significantly reduced. In general, it is recommended to drink soy milk in limited quantities.

How is soy milk made?

There is no difficulty in obtaining a milk drink from soy. To do this, you first need to soak the soybeans in water, allowing them to swell. Then the resulting mass is boiled, cooled and filtered. Then the resulting composition is crushed and filtered, removing everything unnecessary. The result is a liquid called soy milk. This drink is produced using this method in countries where soybeans grow in sufficient quantities.

The industry uses a slightly different method to produce soy drink. First, the soybeans are also soaked in water. Then, using special devices, they are crushed to obtain a puree-like mass and the liquid is squeezed out. After this, the resulting liquid is heated to +150 degrees in a short time. This suppresses the proliferation of pathogenic microorganisms. The result in both methods is a sweet-tasting drink with a pleasant consistency and an unobtrusive aroma.

Further -

It has been proven that milk from soybeans is superior to animal products in many respects.

The mere fact that it belongs to plant foods arouses interest and tips the scales towards choice. However, there is a lot of controversy surrounding the benefits of soy milk - some consider it a magical product, while others believe that regular consumption is harmful to health. To dispel myths and understand how useful this drink is and why, you need to understand its composition and method of preparation.

What is soy milk - briefly about the main thing

Soy milk is an ancient product, invented in the second century BC. Its external resemblance to the usual cow's milk is obvious - the liquid has the same white color and similar consistency. The plant-based drink is based on soybeans, a popular annual herbaceous plant widely used by vegetarians as a source of protein.

However, the plant product was called milk not only because of its visual similarity - the taste and nutritional properties of soy milk are almost identical to cow's milk, while it does not contain cholesterol and is safe for people suffering from allergic reactions to animal milk and lactose.

The production of milk from soybeans includes several stages:

  • soak,
  • boiling,
  • filtration.

Manufacturers enrich the drink with calcium, since the product cannot boast of a high content of calcium, like its animal competitor.

Benefits of soybean drink

Soy drink is consumed both unchanged (hot and cold) and for the preparation of other products and dishes: kefir, cheeses, soups, mashed potatoes, pancakes, ice cream and other desserts. In some Asian countries it has completely replaced milk from animals.

A find for health and beauty

First of all, soy milk is valued for its low calorie content ( about 40 kcal per 100 g) and lack of lactose. A vegetable drink made from soy contains only 1.5% vegetable fats - not only harmless, but also healthy.

Switching to an alternative to dairy products of animal origin helps maintain normal weight and even promotes weight loss, since soy contains lecithin, a substance that has fat-burning properties and normalizes fat metabolism.

Soybeans contain phytoestrogens(isoflavones) are plant hormones that help normalize hormonal levels and compensate for the lack of the main female hormone - estrogen, which is responsible for the health and beauty of beautiful ladies. The lack of estrogen is especially noticeable during menopause, when the body stops producing it naturally. Taking phytoestrogens protects against osteoporosis, relieves hot flashes and reduces nervousness.

It is believed that isoflavones reduce the amount of estrogen released into the blood, thereby preventing the formation of uterine fibroids and breast tumors. Also, phytohormones lengthen the menstrual cycle and delay menopause.

Soy products on 40% consists of valuable plant protein, which, like animals, is the main building material for muscle mass. Soy protein is easily absorbed by the body, meeting the needs of a person who refuses meat or consumes it in limited quantities.

The fat in soy milk is represented by unsaturated fatty acids - the most important elements necessary for normal metabolism, cardiovascular health, skin condition, and good memory.

Soy products are rich in vitamins Group B, necessary for brain function and nervous system activity. Presence vitamin E makes the product an effective antioxidant that prevents the formation of cancer cells.

Summary

We used 200g soybeans to make this recipe and ended up with 330g okara and 600ml soy milk. You may notice that at first we had 200 g of dry soybeans, which after soaking began to weigh about 500 g plus 1000 ml of water, and what we got was only less than 1 kg. Where did the rest go? To be honest, this is also a mystery to me. It probably evaporated. But be that as it may, we received 600 ml of thick soy milk, which cost us 13 rubles.
