The secret to making delicious pasta is quality ingredients. Don’t buy store-bought ready-made minced meat, it’s not tasty at all, and there’s nothing like meat in it, just one name. Buy a piece of inexpensive meat, even if it has veins, grind it yourself at home through a meat grinder, and you will get great pleasure from meatballs. Instead of breadcrumbs, put cheese crackers in the minced meat, it will be tastier.
As you know, the tomatoes available in our stores, unfortunately, are only plastic, but tasty and juicy - for the price of an airplane. Therefore, for the sauce we buy ready-made jars of pureed tomatoes (fortunately, they are available in all supermarkets within walking distance, and there is a good selection), some brands call them “tomato passata”, others call them “mashed tomatoes”. They are very affordable in price, they are no more expensive than our “plastic” tomatoes, or even cheaper, and for tomato sauce this is the most ideal option.

What you need (for 4 servings):
Minced beef - 250 gr.,
Minced pork - 250 gr.,
Cheese crackers (or breadcrumbs) - 100 gr.,
Garlic - 2 teeth,
Dijon mustard - 2 tsp,
Ketchup - 2 tbsp.,
Oregano (dried, can be replaced with thyme, basil or rosemary) - 1 tsp.
Salt, ground black pepper - to taste,
Spaghetti - 350 gr.

For the sauce:
Olive oil - 2 tbsp.,
Onions - 1 pc.,
Garlic - 2 teeth,
Oregano (dried) - 1 tsp,
Tomato passata (mashed tomatoes) - 2 boxes of 500 g each,
Dry red wine - 150 ml.,
Sugar - 1-2 tsp,
Salt and ground black pepper - to taste.

How to cook:
1. Put cheese cracker crumbs into the minced meat (put them in a bag and pound them with a hammer, or punch them in a food processor), grated garlic cloves, mustard, ketchup, salt, pepper, oregano. Knead the minced meat well, roll into walnut-sized meatballs, place them on a board and put them in the refrigerator.
2. While the meatballs are in the refrigerator (they should firm up), let's make the sauce.
Heat olive oil in a saucepan, fry onions until soft, add garlic and fry for another 1 minute. Then, add all the other ingredients for the sauce - pureed tomatoes, wine, oregano, salt, pepper, sugar. Let the sauce boil, taste it, add more spices if necessary, and cook the sauce for 15 minutes, covered, over low heat.
3. Place the meatballs in the sauce, let it boil and cook for another 15 minutes.
4. Boil the spaghetti according to the instructions on the package.
5. Put some of the tomato sauce into the boiled spaghetti, stir, place on a large dish, place meatballs and all the remaining sauce on top of the spaghetti.
When serving, you can sprinkle the pasta with Parmesan cheese and green basil.

RECIPE FOR SPAGHETTI WITH MEATBALLS

NECESSARY:

for 4 servings

500 g spaghetti
Grated Parmesan
Fresh basil

For the sauce:

1 kg of fresh ripe tomatoes (or 800 g can of peeled tomatoes)
1 onion
2 cloves garlic
Olive oil
Chilli
Salt pepper
1-2 tsp. Sahara
Oregano

For the meatballs:

400 g minced beef
1-2 raw pork sausages for frying (about 100 g)
1 piece of dried white bread
50 g grated cheese (parmesan)
Salt pepper

HOW TO COOK:

1. In a wide saucepan, sauté finely chopped onion in olive oil, without browning, until soft, add garlic, lightly fry along with the onion, being careful not to burn.

2. Lightly cut the tomatoes crosswise, place them in boiling water for 30 seconds, remove them, remove the skin, cut out the core, chop coarsely and add to the onion. Simmer over low heat until the liquid has evaporated by about half. Add salt, sugar, oregano and chili to taste.

3. Mix the minced meat with bread soaked in broth or milk and skinned sausage. Salt, pepper, knead well. Add grated cheese and mix well again. Form small balls with wet hands, placing them on a plate.

  5. From the base we make small round meatballs.
  6. Add vegetable oil to the frying pan, put it on the fire and heat it up.
  7. Place the meatballs in hot oil and leave to fry over low heat.
  8. We dilute the tomato with water, and if desired, add a little seasoning to the resulting sauce.
  9. Next, pour the sauce over the meatballs, cover with a lid and simmer for no more than a quarter of an hour.
  10. Place a container of water on the fire and heat it up.
  11. Be sure to add salt to taste and stir.
  12. As soon as the water starts to boil, add spaghetti to it and cook for about 10 minutes.
  13. Then pour out the water, add a little olive oil and stir.
  14. Place the pasta on plates, pour the sauce over it and place the meatballs on top.
  15. If desired, decorate with chopped basil and grated cheese.

  • 400 grams of spaghetti;
  • minced beef and pork – 700 grams;
  • high fat cream – 300 grams;
  • two onions;

  4. Pour water into a saucepan and heat to a boil. Place spaghetti in boiling water and cook until half cooked. Drain the water, rinse and add a little butter;
  5. Pour flour into another frying pan and fry it until creamy. Then add a large spoon of butter and cook until the mixture boils.
  6. Pour in the cream, add tomato paste and stir. Cook the sauce for a quarter of an hour and remove from heat.
  7. Place spaghetti on plates, meatballs on top and pour sauce over them.
  • For making meatballs, minced meat from any meat is suitable - beef, pork, chicken;
  • Do not boil spaghetti for too long, because it may boil and stick together;
  • To prevent the pasta from sticking, be sure to add a little vegetable oil to it after boiling;
